The COMBARIOLLES is the name of an area called between Montpeyroux and Jonquières. The soil consists of pebble, mixed with sand filter very, limestone at depth. This is the ideal soil for a superb Grenache.
It is a gourmet wine and a "serious" one at the same time.
Fun for chocolate aromas, spicy, with touches of orange peel.
THE COMBARIOLLES are in the majority (70%) a blend of Grenache from young vines (12 ANS) and old vines (50 years). The young Grenache brings are dashing appearance, and the oldest all its balance. Their breeding is followed for two years in vats while minimizing oxidation of this grape to preserve the fruit. Syrah, brought in barrels, completes the assembly (about 15%) and a little Carignan and 15% in vats.
The COMBARIOLLES were planted in 5600 hectares feet which is a high density for Languedoc (usually around 4000 feet / ha).
The harvest is entirely manual. After destumming, the maceration last about 4 to 5 weeks, with crushing and pumping.
The addition of sulfur is in small quantities steeping after malolactic, and bottling.
The COMBARIOLLES are raised in tanks for 12 to 18 months.
