El Abanico means the range in Spanish
Produced from young vines planted in altitude on the Causse de Montpeyroux in 2009 and 2010, this wine is a blend of equal parts white Carignan and Grenache Blanc for the Languedoc balance, Chardonnay and Roussanne for their grilled side and buttery, chenin and Petiit manseng for their aromas of undergrowth and vivacity.
The soil has never had a drop of pesticides or herbicides.
Only the scrub grew there.
Goblet planted the vines are harvested by hand and in small crates.
The wine is fermented in barrels of four and a wine for the 2014 vintage and aged for a year before being bottled without filtration by gravity.
A superb balance combining vivacity and roundness, toasty aromas, and floral, and amazing length on the palate.
Drink with lamb sweetbreads with morels and truffles and cream, chicken,
St. Jacques with sweet spices and strong cheeses ...
